Ingredients (view qty in metric system instead)
3 to 4 pounds boneless pork roast or pork shoulder, cut into 2 or 3 pieces 3/4 tsp. salt 3/4 tsp. pepper 2 tbsp. olive oil 4 cloves whole garlic, peeled 1 fresh jalapeno pepper, stemmed and split in 1/2 lengthwise 1 large carrot, peeled and sliced 1 medium red onion, peeled and sliced 6 cups beer(not dark) 1 1/2 cups chicken broth
Directions
Season the pork all over with salt and pepper. Heat the oil in a large skillet over medium heat. Add the pork and brown all over. Transfer the pork to a large crockpot. Add the garlic, jalapeno, carrot and red onion to the skillet and cook 4 to 5 minutes, stirring frequently. Add the beer and broth and bring to a simmer. Pour the beer and vegetable mixture over the pork. Cover the crockpot and cook the pork on High about 4 to 5 hours until tender. Transfer the pork to a platter and tent with foil. Strain the cooking juices into a large saucepan and simmer until reduced by 1/2. Serve the pork with the reduced juices.
Serves 4 to 6.
