Ingredients (view qty in metric system instead)
Crispy Crust: 3 cups crushed Rice Krispies cereal 1/4 cup sugar 1/2 tsp. ground cinnamon 1/2 cup melted butter
Creamy Filling: 12 ounces cream cheese, softened 2 large eggs 1 tsp. vanilla extract 1/3 cup sugar 1 tsp. lemon juice Topping: 1 cup sour cream 2 tbsp. sugar 1 can cherry, apple or other pie filling 1 tsp. lemon juice
Directions
For Crust: Stir together crushed Rice Krispies, sugar, cinnamon and butter in a medium bowl. Press firmly into the bottom and up sides of a 9 inch pie pan.
For Filling: Preheat oven to 375 degrees. Beat cream cheese in a large bowl until smooth. Add eggs, vanilla, sugar and lemon juice. Mix until well blended. Pour filling into the prepared crust. Bake about 20 minutes until set.
For Topping: While pie is baking, stir together sour cream and sugar. Remove pie from oven and spread sour cream mixture over the top. Bake pie an additional 5 minutes. Transfer pie to a rack and cool completely. Stir together pie filling and lemon juice and spread over top of the cooled pie.
Makes one 9 inch pie.
