Ingredients (view qty in metric system instead)
6 tbsp. butter 6 tbsp. olive oil 5 pounds russet potatoes, peeled and cut into 1 inch cubes 1/4 tsp. salt 1/4 tsp. pepper
Directions
Coat 2 large sheet pans with nonstick spray. Melt 2 tbsp. butter with 2 tbsp. oil in a large skillet. Add 1/3 of potatoes and cook, shaking pan frequently, until golden brown, about 10 minutes. Cover and cook until tender, about another 10 minutes. Transfer potatoes to prepared pan. Cook remaining potatoes with remaining oil and butter in 2 batches. Preheat oven to 475 degrees. Roast potatoes until crisp and heated through, stirring occasionally, about 10 minutes. Season with salt and pepper. Serve immediately.
Serves 10 to 12.
