2 slices white or wheat bread 1/2 tsp. salt 1/4 tsp. pepper 2 tbsp. butter 4 pork chops, about 6 to 8 ounces each 2 tbsp. Dijon mustard
Directions
Preheat oven to 350 degrees. Place bread slices into a food processor and grind to fine crumbs. Transfer bread crumbs to a medium bowl and stir in salt and pepper. Place the butter in a small saucepan and melt over low heat. Stir the melted butter into the breadcrumbs until evenly moistened. Spread the Dijon over both sides of the pork chops. Place the chops in a shallow roasting pan. Sprinkle the bread crumb mixture evenly over the top of the chops, pressing lightly to adhere. Bake pork chops about 30 minutes until browned and topping is crispy. Divide chops between plates and serve immediately.
