Ingredients (view qty in metric system instead)
1 1/2 cups prepared mashed potatoes, chilled 3 large eggs, beaten to blend 3 tbsp. all purpose flour 2 tbsp. peeled, minced onion 1 tbsp. baking powder 3/4 tsp. onion powder 3/4 tsp. garlic powder 3/4 tsp. salt 1/2 tsp. pepper sour cream
Directions
Blend together mashed potatoes, eggs, flour, onion, baking powder, onion powder, garlic powder, salt and pepper in a large bowl. Preheat a deep fryer or fill a deep skillet 3 to 4 inches deep with vegetable oil and heat to 400 degrees. Working in batches, drop the potato mixture by tablespoonfuls into the hot oil. Fry potatoes about 2 to 3 minutes per side until slightly puffed and golden. Drain potato puffs on paper towels. Serve puffs hot with sour cream.
Makes about 2 dozen potato puffs.
