two 2 to 3 pound skinned dressed rabbits, cut into serving size pieces 1 tbsp. lemon juice 1/2 tsp. salt 1/2 tsp. pepper 1/4 tsp. dried oregano 4 tbsp. milk 2 large eggs, beaten to blend 1/2 cup flour 1/2 cup fine dry breadcrumbs vegetable oil for frying
Directions
Place rabbit pieces in a large skillet and add water to cover. Add lemon juice. Heat to a boil. Reduce heat and simmer 10 minutes. Drain rabbit pieces and pat dry. Sprinkle with salt, pepper and oregano. Whisk together milk and eggs in a medium bowl. Place flour in a shallow pie plate. Place breadcrumbs in another pie plate. Fill a large skillet with vegetable oil to a depth of 1/2 inch. Heat oil to 350 degrees. Dredge rabbit pieces in flour, then dip completely in egg mixture. Coat rabbit pieces with breadcrumbs, pressing lightly to adhere. Add rabbit pieces to hot oil and cook until browned on all sides and cooked through, turning as few times as possible. Remove rabbit pieces from oil with a slotted spoon and drain on paper towels. Serve immediately.
Serves 6 to 8.
