Ingredients (view qty in metric system instead)
1 cup all purpose flour 1 tsp. baking soda 3 large eggs, yolks and whites separated 1 cup sour cream 3 cups buttermilk 3/4 cup yellow or white cornmeal 4 tbsp. melted butter 2 tbsp. vegetable oil
Directions
Sift together the flour and baking soda in a small bowl. Beat together egg yolks and sour cream in a large bowl. Beat in the flour mixture. Blend in buttermilk 1 cup at a time, beating after each addition. Beat in the cornmeal, melted butter and oil. In a separate bowl, beat the egg whites to stiff peaks. Fold 1/2 of the whites into the cornmeal batter. Fold in remaining whites.
Grease and heat a waffle maker. Using about 1 cup batter per waffle, spoon batter into the prepared waffle maker and cook until crisp and golden brown. Repeat with remaining batter. Serve waffles hot.
Makes about 8 waffles.
