Ingredients (view qty in metric system instead)
8 slices bacon 1 1/4 cups all purpose flour 3/4 cup yellow cornmeal 2 1/4 tsp. baking powder 1/2 tsp. baking soda 2 cups buttermilk 2 large eggs 3 tbsp. maple syrup 1/4 cup melted, cooled butter
Directions
Cook bacon in a large skillet until crisp. Drain on paper towels and crumble. Whisk together flour, cornmeal, baking powder and baking soda in a large bowl. Whisk together buttermilk, eggs and syrup in a medium bowl. Stir into dry ingredients just until blended. Fold in butter and bacon. Preheat waffle iron. Brush with melted butter. Spoon batter onto iron and spread evenly. Cook about 6 minutes until waffle is browned, crisp and set.
Makes about 6 waffles.
