Ingredients (view qty in metric system instead)
2 tbsp. butter 1 medium onion, peeled and minced 2 tbsp. all purpose flour 4 cups chicken broth 3/4 cup creamy peanut butter 1 cup heavy or whipping cream 2 tbsp. minced fresh jalapeno chili 1 tbsp. fresh lemon juice 1/2 tsp. celery salt 1/4 tsp. salt 1/4 tsp. pepper chopped toasted peanuts
Directions
Melt butter in a large saucepan over medium heat. Add onion and cook about 10 minutes until softened, stirring occasionally. Add flour and cook, stirring, about 4 minutes until lightly browned. Stir in broth and peanut butter. Reduce heat, cover and simmer about 20 minutes until slightly thickened, stirring frequently. Stir in cream, jalapeno, lemon juice, celery salt, salt and pepper and simmer until heated through. Ladle into bowls, garnish with toasted peanuts and serve.
Serves 6.
