Ingredients (view qty in metric system instead)
1 pound fresh or frozen, thawed boneless fish fillets, cut into 1 inch pieces 1/2 cup peeled, chopped onion 1/2 cup chopped celery 1/2 cup chopped green bell pepper 2 cloves garlic, peeled and minced 2 tbsp. butter 14 1/2 ounce can chopped tomatoes 1/4 cup water 2 tbsp. tomato paste 1 tbsp. minced fresh parsley 1 tsp. chicken bouillon granules 1 tsp. chili powder 1/2 tsp. worcestershire sauce 1/4 tsp. tabasco sauce 10 ounce package frozen chopped okra 2 cups hot cooked rice
Directions
Melt butter in a large skillet. Add onion, celery, bell pepper and garlic. Cook about 5 minutes until tender, stirring frequently. Stir in tomatoes with juices, water, tomato paste, parsley, bouillon, chili powder, worcestershire and tabasco. Heat to a boil. Reduce heat and simmer 5 minutes. Stir in fish and okra. Heat to a boil. Reduce heat, cover and simmer about 5 minutes until fish flakes easily. Serve mixture over rice.
Serves 4.
