Creole Chicken and Okra Gumbo Recipe Rating: N/A

Ingredients   (view qty in metric system instead)
2 tbsp. vegetable oil
2 tbsp. all purpose flour
1 cup frozen, sliced okra
14 ounce can chicken broth
14 ounce can diced tomatoes with juices
8 ounces boneless, skinless chicken breast, cubed
1 tsp. crumbled dried thyme
1/4 tsp. salt
1/4 tsp. pepper
1 tsp. Tabasco sauce
1/2 tsp. Creole seasoning


Directions
Stir together oil and flour in a large saucepan. Cook, stirring, over high heat for about 3 minutes until dark brown. Mix in okra, broth and tomatoes with juices. Simmer 3 minutes, stirring occasionally. Season chicken with thyme, salt and pepper and add to soup. Simmer about 10 minutes until chicken is cooked through, stirring occasionally. Season gumbo with Tabasco and Creole seasoning. Simmer 2 minutes. Serve hot.

Serves 2 to 4.
