Ingredients (view qty in metric system instead)
1 pound russet potatoes, peeled and chopped 2 medium onions, peeled and chopped 1 large red bell pepper, cored, seeded and chopped 4 cups water 17 ounce can creamed corm 17 ounce can whole kernel corn, drained 1 cup heavy or whipping cream 1 cup milk 1 tsp. salt 1/2 tsp. pepper 1/2 pound raw medium shrimp, peeled and deveined 3 tbsp. chopped fresh chives
Directions
Combine potatoes, onions, bell pepper and water in a large pot and heat to a boil. Reduce heat and simmer about 20 minutes until potatoes are tender. Stir in both corns, cream, milk, salt and pepper and simmer an additional 20 minutes. Stir in shrimp and simmer about 8 minutes until cooked through. Ladle soup into bowls, garnish with chives and serve.
Serves 6.
