Ingredients (view qty in metric system instead)
1 1/4 pounds small red potatoes 1 cup plain low fat yogurt 2 tbsp. grained dijon mustard 2 tsp. dry crumbled tarragon 1/4 cup matchsticked green bell pepper 1/4 cup matchsticked red bell pepper 1/3 cup thin sliced green onion 1/3 cup thin sliced celery 1/4 tsp. salt 1/4 tsp. pepper
Directions
Boil potatoes in salted water until tender. Drain, cool and cut into quarters. Whisk together yogurt, mustard and tarragon. Toss together peppers, onion, potatoes, celery, salt and pepper. Add yogurt mix and toss to coat. Cover and refrigerate about 3 hours before serving.
Approx. 4 servings.
