Ingredients (view qty in metric system instead)
16 ounce package frozen chopped broccoli 1 pound cooked chicken, cut into chunks 10.75 ounce can cream of mushroom soup 1/4 cup milk 1/3 cup mayonnaise 1/2 tsp. lemon juice 1/4 tsp. curry powder 1/3 cup canned chicken broth 1 cup shredded sharp Cheddar cheese 1 1/2 cups dry seasoned stuffing cubes 4 tbsp. melted butter
Directions
Preheat oven to 350 degrees. Coat the inside of a medium casserole dish with nonstick spray. Heat a large saucepan of lightly salted water to a boil. Add the chopped broccoli and boil 3 minutes. Drain the broccoli well and combine with the chicken in the prepared dish. Combine the mushroom soup, milk, mayonnaise, lemon juice, curry powder and broth in a medium bowl and stir until well mixed. Pour the soup mixture over the chicken. Sprinkle the Cheddar and stuffing cubes evenly over the top and drizzle with the melted butter. Cover the dish with foil and bake 30 minutes. Discard the foil and bake the casserole an additional 30 minutes. Let the casserole stand a few minutes before serving.
Serves 4 to 6.
