Ingredients (view qty in metric system instead)
1/3 cup uncooked rice 4 cups milk 2 tsp. cornstarch 1/3 cup sugar 1/2 cup cream 2 apples, peeled. cored and chopped 1/2 cup raisins 2 tbsp. butter 1/4 cup brown sugar 1 tbsp. ground cinnamon, divided
Directions
Combine rice and milk in a large saucepan. Bring to a boil. Stir together cornstarch and sugar in a small bowl. Whisk in cream until smooth. Whisk into rice mixture. Reduce heat. Cover and simmer 40 to 50 minutes until rice is thick and creamy, stirring occasionally. While rice is cooking, combine apples, raisins, brown sugar, butter and 1 1/2 tsp. cinnamon in a medium saucepan. Heat to a simmer. Cook 20 to 30 minutes until apples are tender and mixture is thickened. Pour rice into a large casserole or individual dishes. Top with the apple mixture. Sprinkle with remaining 1 1/2 tsp. cinnamon. Serve warm or cold.
Serves 4.
