Ingredients (view qty in metric system instead)
2 1/2 cups all purpose flour 5 tsp. baking powder 5 tbsp. sugar 3 tbsp. butter, diced 1/2 cup milk 1/4 cup heavy or whipping cream 1 large egg yolk 1/3 cup dried currants 1 large egg, beaten to blend
Directions
Preheat oven to 450 degrees. Grease large baking sheet. Sift together flour and baking powder into a bowl. Stir in sugar. Cut in butter until it resembles fine meal. Whisk together milk, cream and yolk. Stir into dry ingredients just until combined. Stir in currants. Turn out onto a floured surface and pat out to 1 inch thick. Cut out rounds with a 2 1/2 inch diameter round cookie cutter. Place on prepared pan. Brush with blended egg and bake until golden brown, about 15 minutes. Cool slightly on racks. Serve warm with butter and jellies.
Makes 10 to 12 scones.
