Ingredients (view qty in metric system instead)
1/4 cup butter 1 1/2 pounds onions, peeled, halved and thinly sliced 1/8 tsp. ground nutmeg 6 cups chicken broth 1/4 cup dry sherry 1 1/2 tsp. salt 1/2 tsp. white pepper 1/8 tsp. cayenne pepper 2 cups heavy or whipping cream 1/2 cup all purpose flour
Directions
Melt butter in a large saucepan. Add onions and nutmeg and cook over low heat until onions are very tender, stirring occasionally. Add broth, sherry, salt, pepper and cayenne. Bring to a boil. Whisk together cream and flour in a small bowl until smooth. Whisk cream mixture into soup and return to a boil. Reduce heat and simmer soup until thickened, about 30 minutes, stirring occasionally.
Makes about 8 cups soup.
