Ingredients (view qty in metric system instead)
3 tbsp. butter 1 tbsp. olive oil 1 1/2 cups chopped onion 6 large ripe tomatoes, peeled, seeded and chopped 4 tbsp. tomato paste 3 tbsp. all purpose flour 3 cups chicken broth 1 tsp. honey 1/2 tsp. salt 1/4 tsp. white pepper 1 cup heavy or whipping cream
Directions
Melt butter and oil in a pot. Add onions and cook until tender, about 8 minutes. Add tomatoes and paste and simmer 2 minutes. Stir in flour and cook 1 minute. Add broth, honey, salt and pepper. Simmer for 10 minutes. Puree. Add cream and simmer 10 minutes.
Serves 4 to 6.
