Ingredients (view qty in metric system instead)
Carrot Bars: 1/2 cup sugar 1/2 cup brown sugar 1/2 cup vegetable oil 1 tsp. ground cinnamon 2 large eggs 2 1/2 cups buttermilk baking mix 3/4 cup peeled, finely shredded carrots 1/3 cup golden raisins 1/3 cup chopped pecans
Cream Cheese Frosting: 3 ounces softened cream cheese 1/4 cup powdered sugar 1 tbsp. softened butter 1/4 tsp. vanilla extract
60 pecan halves, lightly toasted
Directions
For Carrot Bars: Preheat oven to 350 degrees. Grease and flour a 15x10 inch jelly roll pan. Beat together sugar, brown sugar, oil, cinnamon, eggs and buttermilk baking mix in a large bowl on low speed just until blended. Stir in carrots, raisins and pecans. Spread batter evenly in the prepared pan. Bakle 25 to 30 minutes until a toothpick comes out clean. Transfer pan to a rack and cool completely. Cut cooled bars lengthwise into 5 strips. Cut each strip crosswise into 12 bars.
For Frosting: Beat together cream cheese, powdered sugar, butter and vanilla in a medium bowl until smooth. Pipe frosting in a strip down the center of each bar. Top each with a pecan half.
Makes 5 dozen bars.
