Ingredients (view qty in metric system instead)
4 pound boneless pork loin roast 1/4 tsp. ground cinnamon 1/8 tsp. salt 1/2 tsp. finely grated orange peel 2 tbsp. orange juice 16 ounce can whole berry cranberry sauce 2 tbsp. dry sherry 2 tsp. cornstarch
Directions
Preheat oven to 325 degrees. Place pork roast in a shallow baking pan and roast 45 minutes. Meanwhile, stir together cinnamon, salt, orange peel, orange juice and cranberry sauce in a small saucepan. Stir together sherry and cornstarch until smooth and stir into cranberry mixture. Cook, stirring, over medium heat until thickened. Remove pork from oven and spoon 1/2 cup glaze over. Roast an additional 30 to 45 minutes until pork reaches 155 degrees. Let stand 10 minutes before slicing. Serve with remaining cranberry glaze.
Serves 8 to 10.
