Ingredients (view qty in metric system instead)
1 1/2 cups+1 tbsp. sugar 1/2 cup cranberry juice 8 ounces fresh cranberries 2 pounds granny smith apples, peeled, cored and thinly sliced 1 3/4 pounds golden delicious apples, peeled, cored and thinly sliced 2 tbsp. all purpose flour 1 tsp. fresh lemon juice 1/2 tsp.+ a pinch ground cinnamon 2 prepared unbaked pie crusts 2 tbsp. cold butter, diced 1 tsp. milk
Directions
Stir together 3/4 cups sugar and cranberry juice together in a medium saucepan. Add cranberries and heat to a simmer. Simmer until liquid is almost completely absorbed, about 25 minutes. Transfer mixture to a bowl and cool. Toss together all apples, flour, lemon juice, 1/2 tsp. cinnamon and 3/4 cup sugar in a large bowl. Preheat oven to 400 degrees. Line a 9 inch glass pie pan with 1 pie crust. Spread cranberry mixture over bottom. Top with apple mixture and dot with butter. Place second pie crust over apples and crimp edges of crusts to seal. Cot a 1 inch hole in center of top crust. Brush crust with milk. Stir together remaining 1 tbsp. sugar and pinch cinnamon in a small bowl. Sprinkle over crust. Bake pie 15 minutes. Reduce oven to 375 degrees and bake about 50 minutes until crust is golden. Transfer pie to a rack and cool at least 2 hours. Serve warm or at room temperature.
Makes one 9 inch pie.
