Ingredients (view qty in metric system instead)
Roast: 4 pound beef tip roast 2 tbsp. cracked black pepper 3 tbsp. vegetable oil 2 2/3 cup cranberry juice cocktail
Gravy: broth from above recipe 3/4 cup cranberry juice cocktail 1/3 cup all purpose flour 1/4 tsp. salt
Directions
For Roast: Preheat oven to 325 degrees. Score the surface of meat lightly in a crisscross pattern. Rub pepper over the sides, but not ends, of beef. Brown meat in oil in a dutch oven or large roasting pan, about 15 minutes. Pour cranberry juice over meat. Cover and roast about 2 1/2 hours until tender. Place meat on a platter and tent with foil to keep warm while preparing gravy.
For Gravy: Strain hot broth from roasting pan into a large measuring cup. Transfer 3 cups broth to a small saucepan and heat to a boil. Whisk together cranberry juice and flour until smooth. Whisk into broth mixture and heat to boiling, stirring constantly. Boil, stirring, 1 minute. Season with salt.
Serves 6 to 8.
