Ingredients (view qty in metric system instead)
Stuffing: 4 cups bread stuffing cubes 1 medium carrot, peeled and finely diced 2 stalks celery, finely diced 2 tsp. poultry seasoning 2 cups chicken broth 1/2 tsp. salt 1 tsp. pepper
Turkey: 8 to 10 pound thawed turkey 1 cup chopped fresh or frozen, thawed cranberries 1 cup orange marmalade 1/4 cup water 1 tsp. lemon juice
Directions
For Stuffing: Stir together bread cubes, carrot, celery, poultry seasoning, broth, salt and pepper in a large bowl.
For Turkey: Preheat oven to 350 degrees. Remove the giblets from the turkey. Rinse turkey inside and out. Pack the turkey cavity loosely with the prepared stuffing. Coat the inside of a large roasting pan with cooking spray. Place a rack in the prepared pan. Place the turkey, breast side up, on the rack. Roast turkey about 3 hours until temperature reaches 170 degrees. Meanwhile, combine cranberries, marmalade, water and lemon juice in a medium saucepan. Cook about 8 to 10 minutes over medium high heat until cranberries have popped, stirring occasionally. Spread the sauce all over the turkey and roast an additional 15 minutes. Let turkey stand 15 to 20 minutes before slicing and serving.
Serves 10 to 12.
