Ingredients (view qty in metric system instead)
2 cups all purpose flour 1 cup sugar 1/2 tsp. baking soda 1 1/2 tsp. baking powder 3/4 tsp. salt Juice and grated peel of 1 orange 1 large egg, beaten to blend 2 tbsp. solid shortening, melted 2 cups raw cranberries 1/2ed 1/2 cup chopped walnuts or pecans
Directions
Preheat oven to 325 degrees. Sift together flour, baking soda and baking powder. Stir in sugar and salt. Stir together orange juice and grated peel in a measuring cup. Add enough water to make 3/4 cup. Stir in egg and shortening. Pour over dry ingreds. and stir until moistened and well mixed. Stir in cranberries and nuts. Spoon into a greased loaf pan. Bake until toothpick inserted in center comes out clean approx. 50 to 60 minutes. Cool 10 minutes in pan then turn loaf out onto cooling rack or clean towel and cool completely.
Makes 1 loaf.
