Ingredients (view qty in metric system instead)
8 ounces imitation crab 4 medium zucchini, unpeeled, ends trimmed 2 large eggs, beaten to blend 1 cup shredded cheddar cheese 1/2 cup small curd cottage cheese 1/4 cup minced green onion 1/2 tsp. salt 1/8 tsp. pepper
Directions
Cook zucchini in boiling salted water until tender. Remove from heat. Cover and let stand 10 minutes. Preheat oven to 350 degrees. Halve zucchini lengthwise. Scoop out seeds and drain shells well. Mix together crab, eggs, cheddar, cottage cheese, green onion, salt and pepper. Spoon crab mixture into zucchini shells. Place on an ungreased baking sheet. Bake 15 minutes. Increase oven to 450 degrees and bake an additional 5 minutes. Cut each filled zucchini into 4 to 6 pieces. Place on a platter and serve immediately.
Serves 16 to 20.
