Ingredients (view qty in metric system instead)
Stuffing: 1 cup jumbo lump crab meat, picked over 1 1/2 tbsp. prepared mayonnaise 1/4 finely diced red or yellow bell pepper 1 tbsp. chopped fresh parsley 1/4 tsp. salt
4 sole fillets, 4 ounces each
Breadcrumbs: 1/2 tsp. minced garlic 2 tsp. olive oil 1/4 cup fresh breadcrumbs 1 tsp. finely grated lemon peel
Directions
preheat oven to 450 degrees.
For stuffing: Stir together crab, mayonnaise, bell pepper, parsley and salt. Place sole fillets dark side up and mound stuffing on wider end. Fold thinner end of fillet over. Place in a buttered pie plate and cover with foil. Bake until fish is cooked through, about 20 minutes. Sprinkle with breadcrumbs.
For breadcrumbs: Cook garlic with oil in a skillet 30 seconds. Stir in breadcrumbs and cook, stirring frequently, until golden brown, about 3 to 4 minutes. Stir in lemon peel.
Serves 4.
