Ingredients (view qty in metric system instead)
8 hard bi\oiled eggs, peeled 3 tbsp. prepared mayonnaise 1 tsp. dried tarragon 1 tbsp. minced shallot 2 tsp. fresh lemon juice 1/8 tsp. cayenne pepper 1/4 tsp. tabasco sauce 8 ounces crabmeat, picked over 1/4 tsp. salt 1/4 tsp. pepper
Directions
Slice eggs in half lengthwise. Remove yolks. Place half of yolks in a medium bowl and mash. Add mayonnaise, tarragon, shallot, lemon juice, cayenne, crab, salt and pepper. Mix well. Mound a heaping tbsp. of crab mixture in each egg cavity.
Makes 16 deviled eggs.
