Ingredients (view qty in metric system instead)
Sauce: 1 tbsp. vegetable oil 1/4 cup minced shallot 1 tsp. minced garlic 2 tsp. chili sauce 1/2 cup heavy or whipping cream 1/4 cup vodka 1/4 cup fresh lime juice
Crab Cakes: 1 1/2 cups fresh breadcrumbs 8 ounces crabmeat, picked over 1/3 cup chopped green onion 1/4 cup chopped fresh cilantro 1 large egg 2 tbsp. water
2 tbsp. vegetable oil for frying
Directions
For Sauce: Cook onion and garlic with oil until tender, about 5 minutes. Add chili sauce and stir 1 minute. Add cream, vodka and lime juice. Simmer until thickened to sauce consistency, about 7 to 10 minutes.
For Crab Cakes: Stir together breadcrumbs, crab, green onion and cilantro in a bowl. Whisk together egg and water and stir into crab mixture. Form into 4 patties, using about a 1/2 cupful of crab mixture for each. Heat 2 tbsp. oil in a skillet. Add crab cakes and cook until golden brown, about 4 minutes per side. Drizzle with sauce at service.
Makes 4 crab cakes.
