Crab Cakes: 1 1/2 cups soft, fresh bread crumbs 8 ounces fresh lump crab meat, picked through for shell pieces 1/4 cup chopped green onions 1/2 tsp. salt 1/2 tsp. pepper 1/4 cup chopped fresh cilantro leaves 1 large egg, beaten to blend 2 tbsp. water 4 tbsp. vegetable oil
Sauce: 1 tbsp. vegetable oil 1/4 cup minced red onion 2 medium cloves garlic, peeled and chopped 2 tsp. Sambal Olek garlic chili sauce 1/2 cup heavy or whipping cream 1/4 cup white wine 1/4 cup lime juice
Directions
For Crab Cakes: Combine bread crumbs, crab, green onions, salt, pepper and cilantro in a medium bowl. Whisk together egg and water in a small bowl. Add 3 tbsp. of the egg mixture to the crab and stir to combine. Form the crab mixture into 4 patties. Heat the oil in a large skillet over medium high heat. Add the crab cakes and cook about 4 minutes per side until golden brown and heated through. Drizzle the crab cakes with the sauce and serve.
For Sauce: Heat oil in a large skillet over low heat. Add onion and garlic. Cook about 5 minutes, stirring frequently, until the onion is tender. Add the Sambal Olek and cook, stirring, 1 minute. Stir in cream, wine and lime juice. Simmer about 8 minutes until the sauce is slightly thickened, stirring occasionally.
Makes 4 large crab cakes.
