Ingredients (view qty in metric system instead)
Mustard Mayonnaise: 1/3 cup prepared mayonnaise 3 tbsp. minced sweet pickle 1 tbsp. Dijon mustard
Crab Burgers: 1/4 cup minced onion 1/4 cup minced green bell pepper 2 tbsp. butter 8 ounces lump crab meat, picked through 1/4 cup thin sliced green onion 3 tbsp. prepared mustard mayonnaise from above recipe 2 tbsp. beaten egg 1/2 cup plus 1 tbsp. fine dry breadcrumbs 1/2 tsp. worcestershire sauce pinch cayenne pepper 1/4 tsp. salt vegetable oil for frying 4 hamburger buns, lightly toasted
Directions
For Mayonnaise: Whisk together mayonnaise, pickle, capers and mustard in a small bowl.
For Crab Burgers: Heat butter in a small skillet. Add onion and bell pepper and cook until softened, stirring frequently. Transfer mixture to a large bowl. Add crab meat, green onions, mayonnaise, egg, 1 tbsp. breadcrumbs, worcestershire, cayenne and salt. Place remaining 1/2 cup breadcrumbs in a small bowl. Form cram mixture into 4 patties-mixture will be soft. Coat patties with breadcrumbs. Transfer patties to a small baking pan lined with plastic wrap. Refrigerate patties 10 minutes. Meanwhile, Pour oil into a deep skillet to a depth of 1/4 inch. Heat oil to 350 degrees. Add crab patties and cook about 2 1/2 minutes per side until golden brown and cooked through. Drain burgers on paper towels. Spread mustard mayonnaise on buns. Add crab burgers and serve.
Makes 4 burgers.
