Ingredients (view qty in metric system instead)
12 ounces ground beef 1 large russet potato, peeled and grated 1 1/4 tsp. salt 1/4 tsp. pepper 1/4 tsp. rubbed sage 2 tbsp. tomato juice 1 cup canned kernel corn, drained 1 large onion, peeled and thinly sliced 1 cup canned chopped tomatoes, drained
Directions
Preheat oven to 350 degrees. Grease the inside of a 9x5 inch loaf pan. Combine ground beef, grated potato, salt, pepper, sage and tomato juice in a large bowl. Stir or blend with your hands until well mixed. Spread 1/2 of the beef mixture into the bottom of the prepared pan. Layer the corn, onion and chopped tomatoes over the beef. Cover the vegetables with the remaining beef mixture. Bake meatloaf about 1 hour until cooked through. Let meatloaf rest about 5 minutes in the pan before slicing and serving.
Serves 6.
