Ingredients (view qty in metric system instead)
1 pound bacon 2 cups all purpose flour 2 tbsp. sugar 1 tbsp. baking powder 1 tsp. baking soda 1 tsp. salt 1 1/2 cups yellow cornmeal 4 large eggs 2 cups buttermilk
Directions
Cook bacon in a large skillet. Drain on paper towels. Reserve 1/2 cup fat. Crumble bacon. Preheat oven to 425 degrees. Grease a 9x13 inch baking dish. Sift flour, baking powder and baking soda into a large bowl. Stir in sugar and salt. Stir in cornmeal. Beat together eggs, buttermilk and reserved bacon fat to blend. Stir into flour mixture until evenly moistened. Stir in bacon. Pour into prepared dish and bake about 30 minutes until a toothpick comes out clean. Cut into squares and serve hot.
Makes about 12 to 18 squares.
