Ingredients (view qty in metric system instead)
3/4 cup butter, softened, divided 1 cup brown sugar, divided 1 1/2 cups old fashioned oats, divided 1/2 cup dried currants 1/2 cup dried apricots, quartered 2 large eggs 1 1/4 cups all purpose flour 1 tsp. baking powder 1/2 tsp. baking soda 1/4 tsp. salt 1 tsp. ground cinnamon 1/4 tsp. ground nutmeg 1/4 tsp. ground cloves 1 cup chopped walnuts 1 pound Granny Smith apples, peeled, cored and diced
Directions
Preheat oven to 375 degrees. Butter the inside of a 13x9 inch baking pan. Combine 2 tbsp. butter and 1 tbsp. brown sugar in a small saucepan over medium heat. Cook, stirring constantly, until butter is melted. Remove the pan from the heat and stir in 1/2 cup oats, currants and apricots. Combine remaining butter and brown sugar in a medium bowl and beat until fluffy. Add eggs 1 at a time, beating after each addition. Sift together flour, baking powder, baking soda, salt, cinnamon, nutmeg and cloves in a medium bowl. Add the flour mixture to the batter and beat until blended. Stir in the remaining oats, walnuts and apples. Spread the batter evenly in the prepared pan. Bake 25 minutes. Sprinkle the currant mixture over the top of the bars and bake an additional 5 to 10 minutes until a toothpick comes out clean. Transfer pan to a rack and cool completely. Cut into bars.
Makes about 2 dozen bars.
