Ingredients (view qty in metric system instead)
16 ounce container low fat cottage cheese 2/3 cup whole wheat or all purpose flour 1/3 cup multigrain oatmeal 2 large egg yolks 3 tbsp. honey 2 tbsp. milk 1/2 tsp. vanilla extract 1/4 tsp. ground cinnamon 6 large egg whites
Directions
Mix together cottage cheese, flour, oatmeal, yolks, honey, milk, vanilla and cinnamon in a large bowl. Beat egg whites in a separate bowl until stiff peaks form. Fold beaten egg whites into batter in two additions. Heat a large, nonstick skillet over medium heat. Brush the pan with some of the oil. Add 1/3 cupfuls of batter to skillet. Cook pancakes about 3 minutes until bottoms are browned and bubbles form on top. Turn pancakes over and cook about 4 minutes until browned and cooked through. Serve pancakes hot.
Makes about 8 to 12 pancakes.
