Ingredients (view qty in metric system instead)
3 tsp. olive oil, divided 1 tbsp. minced shallot 2 tbsp. apple jelly 1 tsp. chopped fresh thyme or 1/2 tsp. dried 2 tsp. cider vinegar 1 large cornish game hen, cut in half, backbone discarded 1/4 tsp. salt 1/4 tsp. pepper apple slices
Directions
Preheat broiler. Heat 2 tsp. oil in a small saucepan over low heat. Add shallot and cook 2 minutes. Add jelly and thyme and stir until jelly melts. Stir in vinegar. Reserve. Rub remaining tsp. oil over hen halves. Season with salt and pepper. Place hen halves skin-side down on a broiler pan. Broil 5 inches from heat until browned and crisp, 10 minutes. Brush with reserved jelly mixture. Turn hen halves over. Broil until just cooked through and juices run clear, about 5 minutes. Brush with jelly mixture and broil until glaze just starts to brown, about 1 minute. Garnish hen halves with apple slices. Serve immediately.
Serves 2.
