Ingredients (view qty in metric system instead)
Sauce: 2 cups chicken broth 1 cup beef broth 1 grapefruit 1 orange 1 lime 1/4 cup sugar 3 tbsp. water
Hens: 2 cornish game hens, about 1 1/2 pounds each 2 tbsp. butter
Directions
For sauce: Combine chicken and beef broth in a saucepan and bring to a boil. Reduce to 1/2 cup. Reserve. Cut away colored part of peel only from fruit. Cut peels into matchsticks. Juice fruit into a saucepan. Stir in sugar, water and peels. Bring to a boil. Simmer 20 minutes. Add reduced broth and reduce to 1/2 cup.
For hens: Cut each hen in 1/2 lengthwise through the breastbone. Heat butter in a skillet. Add hens and cook about 3 minutes per side, until hens are golden brown and cooked through. Serve sauce over.
Serves 2.
