Ingredients (view qty in metric system instead)
1 pound ground beef 1/2 cup prepared enchilada sauce 6 ounce package dry cornbread mix 1 large egg 1/3 cup milk 2 tbsp. melted solid vegetable shortening 1 cup grated Monterey Jack cheese 1/2 cup chopped tomatoes 1/4 cup chopped onion 2 tbsp. chopped fresh parsley 2 tbsp. sliced green onion
Directions
Preheat oven to 400 degrees. Grease a 10 inch oven-proof skillet. In a separate skillet, brown ground beef until cooked through. Drain beef and stir in enchilada sauce. Combine cornbread mix, milk, egg and shortening in a large bowl. Mix until just combined. Transfer batter to the oven-proof skillet and bake for 10 minutes until cornbread is set. Top with beef and cheese. Bake pizza an additional 5 to 8 minutes until cheese is melted. Remove pizza from oven and sprinkle tomatoes, both onions and parsley over top. Cut into 4 wedges and serve.
Serves 2 to 4.
