Ingredients (view qty in metric system instead)
7 ounce can whole kernel corn 1 cup soft fresh bread crumbs 1/4 cup peeled, minced onion 1 tsp. salt 1/4 tsp. dried sage 6 thick cut pork chops, about 8 ounces each 2 tbsp. solid vegetable shortening
Directions
Stir together corn with juices, bread crumbs, salt, onion and sage in a medium bowl. Cut a horizontal pocket in the side of each pork chop. Spoon the corn stuffing into the pockets. Melt the shortening in a large skillet over medium heat. Add stuffed pork chops and cook 15 minutes on 1 side. Turn pork chops over. Cover the skillet and reduce heat to low. Simmer pork chops 1 hour.
Serves 6.
