Ingredients (view qty in metric system instead)
3 tbsp. butter, softened 3 tbsp. all purpose flour 1/4 cup sugar 2 large eggs 1 1/2 cups milk 2 cups frozen corn kernels, thawed 1/8 tsp. pepper
Directions
Preheat oven to 375 degrees. Beat together butter, flour and sugar until light and smooth. Add eggs and beat until combined. Combine milk, corn kernels and pepper in a blender. Process until smooth. Add to flour mixture and mix well. Pour into a greased 6 cup casserole dish and bake 35 minutes. Increase oven to 400 degrees and bake an additional 15 minutes until pudding is firm and top is lightly browned.
Serves 4 to 6.
