Ingredients (view qty in metric system instead)
1 tbsp. olive oil 1/2 tsp. minced garlic 4 frozen, thawed cod fillets, about 5 ounces each 2 tbsp. Italian seasoning, divided 14 1/2 ounce can chopped Italian style tomatoes with herbs, drained 1 1/2 tbsp. fresh lemon juice
Directions
Heat a large skillet over medium heat. Add oil and garlic to skillet. Sprinkle 1 side of cod fillets with Italian seasoning. Add to skillet, seasoned-side down. Cook 2 minutes. Sprinkle remaining 1 tbsp. seasoning over uncooked side of cod. Flip cod over and cook 2 minutes. Spoon canned tomatoes around fish. Spoon lemon juice over cod. Cover and simmer 4 to 6 minutes until fish is cooked through. Transfer cod to plates and spoon pan sauce over.
Serves 4.
