Ingredients (view qty in metric system instead)
Crust: 2 cups all purpose flour 1 cup cold butter, diced 2/3 cup powdered sugar 1/8 tsp. salt
Topping: 1/4 cup butter 1/2 cup brown sugar 3/4 cup canned cream of coconut 1/4 cup heavy or whipping cream 2 tbsp. fresh lemon juice 3 cups sweetened shredded coconut 1 1/3 cups halved macadamia nuts
Directions
For Crust: Preheat oven to 350 degrees. Butter a 13x9 inch baking pan. Combine flour, butter, powdered sugar and salt in a food processor. Pulse until a dough just forms. Press dough evenly onto the bottom of the prepared pan. Bake crust about 20 minutes until golden.
For Topping: Melt butter in a large saucepan. Remove from heat. Whisk in brown sugar until dissolved. Whisk in coconut cream, heavy or whipping cream and lemon juice. Stir in coconut and macadamias. Pour topping over crust. Bake about 45 to 50 minutes until top is golden. Transfer pan to a rack and cool completely. Cut into bars.
Makes about 3 dozen bars.
