Ingredients (view qty in metric system instead)
1 1/2 cups sugar 3/4 cup shredded sweetened coconut 1/2 cup buttermilk 1/2 cup unsweetened coconut milk 1 tbsp. all purpose flour 2 large eggs 2 large egg yolks 1/2 tsp. vanilla extract 1 tbsp. fresh lime juice 2 tsp. finely grated lime peel pinch salt one 9 inch unbaked pie shell
Directions
Preheat oven to 350 degrees. Whisk together sugar, shredded coconut, buttermilk, coconut milk, flour, eggs, egg yolks, vanilla, lime juice, grated lime peel and salt in a large bowl until well blended. Pour into the pie shell. Place the pie on a sheet pan and bake 40 to 50 minutes until filling is just set. Transfer pie to a rack and cool completely. Refrigerate pie until ready to serve.
Serves 8 to 10.
