Ingredients (view qty in metric system instead)
1 1/2 pounds skinless cod fillets 1 cup chopped green onions 1/2 cup minced celery 3/4 cup all purpose flour 1 tsp. salt 1 tsp. dried red pepper flakes 1/2 tsp. grated lemon peel 1/4 tsp. cayenne pepper 2 large egg yolks 2 1/4 cups shredded coconut vegetable oil for frying
Directions
Preheat oven to 350 degrees. Place cod fillets in a lightly buttered baking dish. Bake cod until fish flakes easily, about 15 minutes. Drain cod. Flake cooked cod into a large bowl. Add green onions, celery, flour, salt, pepper flakes, lemon peel, cayenne and egg yolks. Blend well. Shape mixture into 6 patties. Spread coconut on a sheet pan. Coat cod patties with coconut, pressing to adhere. Cover and refrigerate patties 1 hour. Heat oil in a deep skillet to 350 degrees. Add cod patties and fry until patties are cooked through and coating is crisped and browned, about 3 minutes per side. Drain cod patties on paper towels and serve.
Makes 6 cod cakes.
