Ingredients (view qty in metric system instead)
3 pounds boneless lamb shoulder, cut into 1 inch cubes 1 tbsp. minced fresh parsley leaves 1 tsp. dried thyme 1/2 tsp. salt 1/2 tsp. pepper 6 cups chicken broth, divided 3 pounds potatoes, peeled and cut into cubes 1 large onion, peeled and finely chopped 1 pound carrots, peeled and diced 1 bunch celery, diced 6 tbsp. all purpose flour 1/4 cup vegetable oil
Directions
Combine lamb, parsley, thyme, salt, pepper and 4 cups broth in a large pot. Cover and simmer 90 minutes over medium low heat, stirring occasionally. Add potatoes, onion, carrots, celery and remaining 2 cups broth. Cover and simmer another hour, stirring occasionally, Whisk together flour and oil in a small bowl until smooth. Whisk the flour mixture into the stew. Simmer 3 to 5 minutes until stew is thickened. Serve hot.
Serves 8 to 10.
