Ingredients (view qty in metric system instead)
2 pounds pears, peeled, cored and diced 1 cup sugar 1/2 cup vegetable oil 2 large eggs, beaten to blend 2 tsp. vanilla extract 2 cups all purpose flour 2 tsp. baking soda 2 tsp. ground cinnamon 1 tsp. ground nutmeg 1 tsp. salt 1 cup raisins 1 cup chopped walnuts
Directions
Preheat oven to 325 degrees. Butter 18 muffin cups. Stir together pears and sugar in a medium bowl. In a large bowl, beat together oil, eggs and vanilla. Stir in pear mixture. Stir together flour, baking soda, cinnamon, nutmeg and salt and add to batter. Fold in raisins and walnuts until just combined. Divide batter between the prepared muffin cups. Bake about 30 minutes until a toothpick comes out clean. Serve muffins warm or at room temperature.
Makes 1 1/2 dozen muffins.
