Ingredients (view qty in metric system instead)
2 large eggs 2/3 cup brown sugar 3/4 tsp. salt 1 tsp. ground nutmeg 1/4 tsp. cinnamon 1/4 tsp. allspice 1/4 tsp. cardamom 6 tbsp. butter, melted and cooled 1 cup apple cider 3 cups sifted all purpose flour 1/2 cup whole wheat flour 2 tsp. baking powder 1/2 tsp. baking soda corn oil for frying powdered sugar
Directions
beat together eggs, sugar, salt and spices until ribbons form when beaters are lifted. Gradually beat in butter and cider. Stir together flours, baking powder and baking soda. Add to batter and beat until just mixed. Cover and refrigerate 1 hour. Preheat oil to 365 degrees. Turn 1/2 the batter out onto a floured surface and pat out to 1/2 inch thick. Cut out doughnuts with a cutter and place on a floured sheet pan. Fry 3 or 4 at a time, turning once, until doughnuts are puffed and golden, 1 to 2 minutes. Repeat process with remaining batter. Drain on paper towels and sprinkle with sifted powdered sugar.
Makes about 2 dozen doughnuts.
