Ingredients (view qty in metric system instead)
1 tbsp. sugar 1 1/2 cups self rising flour 1/2 cup cornstarch 1 tbsp. seasoned salt 2 tsp. paprika 1/2 tsp. baking soda 1/2 cup dry biscuit mix 1 envelope dry Italian dressing mix 1 envelope dry onion soup mix 4 large eggs 1/2 cup cold water 1 cup corn oil 8 pieces chicken
Directions
Preheat oven to 350 degrees. Spray the inside of a 9x13 inch baking pan with cooking spray. Stir together sugar, flour, cornstarch, seasoned salt, paprika, baking soda, biscuit mix, Italian dressing mix and onion soup mix in a large bowl. Whisk together eggs and water to blend in a medium bowl. Dip chicken pieces into egg mixture to coat. Add coated chicken pieces to dry mixture and coat well. Return chicken to egg mixture and coat again. Return once again to dry mixture and coat again. Heat oil in a large skillet over medium high heat. Add chicken pieces to the skillet, skin side down, and cook 4 to 6 minutes until browned. Turn chicken over and continue cooking 4 to 6 minutes until underside is browned. Transfer chicken to the prepared pan. Cover pan tightly with foil, leaving one corner open to vent steam. Bake chicken 45 to 50 minutes until cooked through. Uncover chicken and bake an additional 5 minutes to crisp coating. Serve immediately.
