Ingredients (view qty in metric system instead)
Salad: 6 boneless, skinless chicken breast halves, about 5 to 6 ounces each 2 tbsp. dry white wine 2 cups seedless red grapes 2 medium red apples, cored and cut into chunks 2 stalks celery, sliced 1/2 cup toasted chopped walnuts 2 green onions, thinly sliced lettuce leaves
Dressing: 1/2 cup mayonnaise 1/2 cup sour cream 1 tbsp. sherry wine vinegar 1 tsp. crumbled dried rosemary 1 large shallot, minced 1/4 tsp. salt 1/8 tsp. pepper
Directions
For Salad: Preheat oven to 400 degrees. Spray the inside of a shallow baking pan with cooking spray. Place chicken breast halves in the prepared pan. Bake about 15 minutes until cooked through. Cool chicken. Cut into large chunks. Combine chicken chunks, wine, grapes, apples, celery, walnuts and green onions with half of the salad dressing in a large bowl. Mix well, adding more dressing if necessary. Portion salad onto 6 lettuce leaf lined plates. Serve immediately.
For Dressing: Whisk together mayonnaise, sour cream, sherry vinegar, rosemary, shallot, salt and pepper in a medium bowl. Add a little water if necessary to make a thick but pourable dressing.
Makes 6 salads.
