Ingredients (view qty in metric system instead)
Dressing: 1/2 cup prepared mayonnaise 1/2 cup sour cream 1 tbsp. sherry wine vinegar 1 tbsp. chopped fresh rosemary 2 tbsp. minced shallot 1/4 tsp. salt 1/4 tsp. pepper
Salad: 6 boneless, skinless chicken breasts 2 tbsp. dry white wine 2 cups seedless red grapes 2 medium red apples, cored and cut into chunks 2 stalks celery, sliced 1/2 cup toasted walnuts 2 green onions, thinly sliced
Directions
For Dressing: Whisk together mayonnaise, sour cream, sherry wine vinegar, rosemary, shallot, salt and pepper in a small bowl. Thin with a little water if dressing is too thick.
For Salad: Preheat oven to 400 degrees. Trim fat from chicken breasts. Place chicken in a shallow roasting pan. Bake about 15 minutes until chicken is cooked through. Cool chicken and chop into large chunks. Combine chicken, wine, grapes, apple chunks, celery, walnuts and green onions in a large bowl. Add half of dressing and mix well. Scoop chicken mixture onto lettuce lined plates. Serve immediately with remaining dressing on the side.
Serves 6.
