Ingredients (view qty in metric system instead)
2 cups pecan halves 1 1/3 cups heavy or whipping cream 1 cup sugar 1/2 cup light corn syrup 1/3 cup milk 1/4 cup butter 1 tsp. vanilla extract 12 ounces chopped bittersweet or semisweet chocolate
Directions
Butter 2 large cookie sheets. Arrange pecan halves in 24 clusters resembling turtles on prepared pans. Combine cream, sugar, corn syrup, milk and butter in a medium saucepan. Stir over low heat until sugar dissolves. Boil, without stirring, until mixture turns golden and a candy thermometer reads 234 degrees, about 15 minutes. Remove pan from heat and stir in vanilla. Immediately drop 1 tbsp. of caramel mixture onto center of each pecan cluster. Melt chocolate in a double boiler over medium-low heat. Stir until smooth. Spoon 1 tbsp. chocolate over each turtle. Refrigerate until chocolate sets, about 30 minutes.
Makes about 2 dozen turtles.
